Valentine's Marshmallow Pops

Cute idea alert!!!! While pinning on Pinterest, I found the cutest Valentine's day project from The Decorated Cookie!  Not only is it a cute project to do with your kids, friends, and lovers, it's also a marshmallow on a stick!

Valentine's Day Cupcake in a Jar


It's that time of year again!  The holidays are over, 2012 has begun and January is nearing its end.  Now all of the sudden, love is in the air and all of the sweeties around the world are preparing for Valentine's Day.  What does one do to prep themselves for the mushiest holiday ever made?  Make dinner reservations, hand make a Valentine, burn a cd with all classic love songs, and of course, stock up on sweets.


Jill from Stay Calm Cupcake was super sweet and helped me prepare for the big day by letting me taste testing her Valentine's Cupcake Jars.  Awesome alternative to a regular cupcake huh? There's something about glass jars that brightens up everyone's day just by seeing one.  But when one of these glass jars is filled with cupcakes?  Fahhgetaboutit!  Deliciousness in a jar!  


These festive sweets come in Chocolate and Vanilla Flavors.  Each jar contains two cupcakes and tons of smooth and creamy pink buttercream frosting.  Dip your finger in some and it's definitely finger licking good!  Don't worry, it's not too thick like the frosting on the cupcakes at the supermarket, just the right amount. Be prepared though- your tongue will be extra pink for a bit after consumption.  Hey, it gets you even more in the spirit of Valentine's Day!  


The chocolate cupcake jar was extremely moist and filled with that decadent chocolatey flavor.  It is double chocolate fudge flavored after all. Yum!  The vanilla cupcake jar was also moist and had a delicious buttery taste to it.  Each cupcake jar was topped with pink frosting and a crunchy, decorative heart on top which was a very potent flavor. Pair these cupcakes with milk and you will be golden!

Red Velvet Cake Martini


Happy Thirsty Thursday!  I don't know about all y'all but I can say that the first time I ever heard about "Red Velvet Cake" was just a few years ago.  After that, it became the newest and biggest fad that's still around!  Celebrities dig it, babies dig it, while teens, tweens, and adults do too!  My brother who HATES cake, even likes it.  It hits the spot and is so rich, filling, and delicious.  

But what if you don't have time to bake a whole cake, you say?  Well then, I have the perfect solution for  you.  Being that it's Thirsty Thursday, let's make Red Velvet Cake Martinis instead!!

Ingredients
-2 oz Stoli Vanil
-1 oz Godiva White
-1 spoonful Red Velvet Powder
-Dash simple syrup, dash heavy cream

Instructions
Drizzle and swirl white and red chocolate syrups in martini glass.  Pour all ingredients in martini shaker and shake, shake, shake!  Strain into martini glass, cheers and take a sip!

Funfetti Cookies

Happy 2012 candy lovers!  This is my first post of 2012, so I figured I need to make it extra sugary, sweet, and delicious!  Today you will be learning how to make delicious Funfetti Cookies.  If your New Year's resolution is to bake more and consume more sweets, start HERE!  What a bright, colorful, and exciting way to welcome 2012! 

One thing that you must know about me is that my favorite cake EVER is Funfetti.  Ask my family, every year for my birthday, they know that's the cake to make.  That's why I was super excited to find this recipe and scrumptious photos from Baked Perfection.  I can't wait to whip up a batch and know that they will have that same great delicious mini Funfetti cake taste in a bite size portion.

Instructions/Ingredients
Yield 2 dozen cookies

1 (18.25) package Funfetti Cake
2 eggs
1/3 cup vegetable oil
2 tablespoons milk
1 teaspoon vanilla extract

Preheat oven to 375 degrees F. Pour cake mix into a large bowl. Stir in eggs, oil, milk, and vanilla until combined. Drop teaspoons of dough onto an ungreased cookie sheet. Bake 7-9 minutes in the preheated oven. The bottoms will be light brown. Move cookies to a cooling rack, cool completely before assembling.

Frost bottom side of half the cookies. Top with unfrosted cookie. Roll edges in assorted sprinkles.

Very Vanilla Frosting

1 stick of butter, softened
3 cups powdered sugar
pinch of salt
1 1/2 tablespoons vanilla extract
2 tablespoons milk

Beat butter and vanilla until creamy. Add salt. Add powdered sugar 1 cup at a time, beating until combined. Add milk 1 tablespoon at a time until you reach desired consistency.
